Zucchini / Squash Grill

15 Minutes to Prepare and Cook

Ingredients

1/2 cup sliced Zucchini
1/2 cup sliced Summer (Yellow) Squash
6 Tablespoons Pico de Gallo
1/4 Teaspoon Black Pepper

Directions

Slice 1/2 cup fresh Zucchini and Summer (Yelow) Squash.
Place on a 9 X 9 piece of aluminum foil.
Sprinkle black pepper over slices.
Top with 6 Tbls. Pico de Gallo.
Fold aluminum foil over the veggies and secure the edges well.
Place on the grill AWAY from the fire for about 10 minutes.

Use to top burgers or hot dogs or eat alone as a great side-dish!

Almost Veggie Pizza

This recipe can be made with or without the pepperoni slices. If you leave off the pepperoni, then subtract 53 calories and 199 mg of Sodium from the nutritional info!

Ingredients

1 English Muffin, sliced open
6 Pepperoni Slices
2 Tablespoons Pizza Sauce
3 Slices Zucchini
3 Slices Summer (Yellow) Squash
2 Tablespoons Pico de Gallo
2 Tablespoons shredded cheese

Directions

Slice English Muffin open and lay flat on baking pan.
Top each side with one (1) Tablespoon of sauce.
Place three (3) slices of pepperoni on each muffin.
Place three (3) slices of zucchini on one muffin half and three (3)
slices of squash on the other.
Top each muffin with a tablespoon each of pico de gallo
and the shredded cheese.
Bake at 375 for approx. 10 minutes until the cheese is melted
and bubbly.
Serves 1.

Counting my losses

I've lost a few pounds since my last post -- in fact, I'm down to 253 pounds. That's a total of 45 pounds since January!

I feel so much better. I'm eating better, healthier foods. Heck, I'm even eating yogurt!

If I can do this -- Anyone can do this! :)

Tomorrow is my 19th Anniversary. This year I give my DH a gift he's been wanting for a long time: a happier, healthier me.

Since July 2008, I've lost 42 pounds and I'm still losing. As a matter of fact, I weighed in on May 4th and I'd lost another 4 pounds. That takes me to 256.
Yes, I have a long way to go but I've come a long way, too.

So, Mike, this is for you, sweetie. :)
