I'm down another pound! So, to meet my goal of weighing 245 pounds by July 31st, I need lose only two (2) more pounds!

I feel so much better... my clothes are getting looser... I sleep better.

I met my first goal!
I wanted to weigh in at 250 pounds by July 1st -- I met that goal today with 11 days to spare! YIPPEE!
Now, I've re-set my short-term goal to 245 pounds by July 31st.
Mike put together the mini-trampoline for me a couple nights ago. Boy... that is some workout on your leg and calf muscles! I really like it, though!
Walking has been a hit-and-miss proposition this past week. Between the rain and the oppressive heat, I haven't walked nearly as much as I'd wanted.
Today, it's supposed to be at 100 degrees, 103 tomorrow, and 101 on Sunday. I can't function in that kind of heat -- I'm just too padded with fat to be comfortable (or safe). I long for Fall.
This is a short, but very happy, update.

Another pound down... and an adventure!
I'm down one more pound! That's great considering my 4-day 'break'. This week will show more progress, I hope, as I'll have a new piece of workout equipment.
I should have my mini-tramp this weekend. Yea!
Mike and I -- well, mostly me -- had an adventure today. I went surveying with him! Boy, it was so hot... but we did a "Finished Floor" and I really got to see what it is that he does.
Morgan and my Dad are headed for Shreveport, Louisiana. Then, on to Dallas. They are having a blast, too. They toured Bourbon Street and the French Quarter yesterday.
Morgan and I made a wager -- I have to lose eight (8) pounds by the time they get back in July. I'm down one -- so I think I can get it done.
Winner treats for Sushi!

Goodies!
Yesterday was a wonderful stress-free day.
Mike put an exercise bike on lay-away for me. It's the ProForm XP Whirlwind 280 -- we got it at Sears. It was the ONLY model on the floor that had the movable handles that allow for both an upper and lower body workout.
I also bought a Fitness / Workout Journal at Barnes and Noble:
I Will Get Fit This Time by Alex A. Lluch. I'm hoping this Workout Journal will help me as much as the Nutrition Journal has done.
Mike has also promised me a mini-trampoline. We both tried it out yesterday and it was just too cool -- a lot of fun and a lot of ways to get your motor running!
Today, Mike and I are going to a cookout in Savannah with some friends.
I'm taking along my Boca Burgers (No, I'm not a vegetarian but I love these veggie burgers!) and my thin, whole wheat buns. Just to be on the safe side of the calorie scale today.
I'm looking forward to another relaxing day.

Chicken and Veggie Tacos
Be sure to drain ALL canned vegetables. Doing so will really lessen the amount of sodium in this meal -- probably by half.
Serve with taco shells or tortillas.
This is a low-fat, high-protein meal!
245 Minutes to Prepare and Cook
Ingredients
1 Can Rotel MILD Diced Tomatoes and Green Chilies
1 Package McCormick Chicken Taco Seasoning Mix
1 Can Green Giant Mexicorn
1 Can Dark Red Kidney Beans
1 Can Bush's Black Beans Seasoned Recipe
1 Can Swanson Low Sodium Chicken Broth
2 1/2 to 3 Chicken Breast, bone and skin removed
Directions
Place 2 cups chicken broth, taco seasoning mix and chicken breasts in crockpot.
Cover and cook on HIGH for 2 hours.
After two hours, shred chicken and add all other ingredients,
turn down to LOW for another two hours.
Serve with taco shells or tortillas.
