Hot Pepper Raspberry Chipotle Sauce -- Ends 2/8/12

I am a huge fan of Robert Rothschild Farm and their incredibly delicious sauces, condiments, topppings, and dips.

Just recently, Mike and I were delighted to receive a jar of Hot Pepper Raspberry Chipotle Sauce.

We knew exactly when and how we were going to use it! Mike and his friend, Thomas, love to cook-out and had already planned a huge bar-be-cue.

We took the sauce and used it to marinate / baste venison, turkey, chicken, and ribs. It's utterly fantastic!

The hot pepper is a nice, intense heat but not so hot that it masks or ruins the flavour of the meat. The raspberry adds a lovely refreshing sweetness -- the combination of hot and sweet is perfect for grilling.

We give it 11 thumbs up (that's how many people were at the bar-be-cue. :D

Hot Pepper Raspberry Chipotle Sauce

Description:
Sweet, sun-ripened raspberries are blended with smoky, spicy chipotle peppers. A perfect blend of sweet and spicy.
Suggested Uses:
This sauce basted on ribs is a treat for the palate or pour over meatballs for a quick appetizer.

Hot Pepper Raspberry Meatballs

Ingredients:

•1 lb. Meatballs, frozen
•1 jar Robert Rothschild Farm Hot Pepper Raspberry Chipotle Sauce

Instructions:

Place frozen meatballs and Hot Pepper Raspberry Chipotle Sauce in a crock pot and let cook until meatballs are thoroughly heated.

I've loved cereal since I was a kid. Back then, the more sugar the better and I paid no attention to any other ingredients. I didn't know what whole grain was or why it was important, either.

Times change. Today, whole grain is the first thing I look for in cereals and other wheat or grain products.

Imagine my surprise when asked to review my favourite General Mills cereals that now feature more whole grain than ever before.

I'd forsaken some cereals because they lacked whole grain and now I discover that General Mills is listening and positively responding to their customers wants and needs! I have great respect for companies that truly care about the health of the consumer.

Ringing in the New Year often means new eating habits. We know whole grain is important to you, and the Dietary Guidelines recommend choosing products with a whole grain listed as the first ingredient. Now every cereal with the white check has more whole grain than any other single ingredient with the same great taste. You will see "whole grain" as a part of the first ingredient on the ingredient list, indicating that whole grain is the first and most prevalent ingredient.

According to Dr. Travis Stork, emergency room physician and host of "The Doctors," identifying whole grain products can be challenging. Shoppers can look for nutritional cues on the front of the box, but they need to read the ingredient list to know if they are getting enough whole grain. Ingredient lists detail ingredients in order of prevalence, and if the words "whole grain" are followed by a grain like wheat or oats, it means the food contains more whole grain than any other single ingredient. Here´s how to determine if your cereals have whole grain as a first ingredient:

With all the health messages facing grocery store shoppers, it can be confusing to translate what appears on food labels into nutritional needs, and hard to determine which foods have a meaningful amount of whole grain. Dr. Stork has some additional recommendations to help you include whole grain easily into your diet. They include:

*Start Early!
The Dietary Guidelines recommend people get at least 48 grams of whole grain in their daily diets. Get a jump-start on the day´s nutrition by incorporating whole grain into your morning routine. For instance, when choosing cereal make sure whole grain is listed as the first ingredient. One easy choice is cereal with the white check, which have more whole grain than any other single ingredient.

*Make Simple Swaps.
Choose whole grain versions of the foods you love. Great options include whole wheat pasta and whole wheat bread or even whole grain crackers. Also, try different types of whole grain. Use brown rice instead of white rice as a side dish at dinner or popcorn, which is a whole grain, for a snack.

*Don´t Judge a Food by Its Cover.
The front of food packages provide good nutritional cues, but don´t forget to read the ingredients and check the nutrition label and side labels for additional health information. Cereals with the white check even include the amount of whole grain per serving on packaging.

Crunchy Chicken Nuggets
Prep time: 15 Min
Cook time: 25 Min
Makes: 4 servings

Ingredients:
2 cups Cheerios® cereal
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup milk
2 tablespoons honey
1 tablespoon mustard
1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
2 tablespoons butter or margarine, melted

Directions:
Heat oven to 400°F. Spray with cooking spray or lightly grease 13x9-inch pan.
Finely crush cereal. Stir together cereal, salt and pepper; set aside. In medium bowl, stir together milk, honey and mustard until blended. Dip chicken into milk mixture; coat with cereal mixture. Place chicken in pan; drizzle with melted butter.
Bake 20 to 25 minutes or until crust is golden and chicken is no longer pink in center.

One of our favourite recipes is quick, easy, and so good!

Baked Ravioli

1 Jar Prego Roasted Garlic and Herb sauce

1 package fresh cheese ravioli (frozen will work but not quite as well).

1/2 cup parmesan cheese.

Prepare the ravioli according to directions.

In casserole dish, spread 1/2 sauce on bottom, add ravioli, top with remaining sauce and parmesan cheese. Bake at 400 for about 15 - 20 minutes until cheese is bubbly. Serve hot with crusty bread!

I've been driving since I was 14. Yes, 14. (I'm 51 now) I grew up on Tybee Island and we all began driving about that age. The Police knew us (or more importantly, our parents) and, as long as we didn't go totally wild, they let us get away with it.

Probably NOT the best decision our parents ever made.

I made Lizz wait until she was 15 to get her graduated Learner's Permit. It was the right thing to do. Not to mention the fact that my heart couldn't have taken it one day earlier.

I've developed good driving skills over the years and I'd like to share some tips with you now.

*DON'T TEXT AND DRIVE! Seriously, keep your eyes on the road. Texting a death-trap. Whatever it is, it can wait.

*KEEP A TOOL KIT IN THE CAR! Yes, a tool kit. Make sure it has two screwdrivers (Philips head and flathead), hammer, duct tape, etc. Things break on cars -- be able to fix them!

*TAKE A WALKABOUT Before taking off, take a walk around the outside of the car. Kick the tires, check the wear on the tread. Look for damages, check your windshield wipers, and check the fluids (brake, transmission, wipers, and oil).

*USE YOUR MIRRORS The mirrors of your car are very important. They are there for a reason. Don't just stare at what's in front of you. Occasionally check your rear view mirror and your side mirrors. Pay attention to what's going on around you. Drive defensively.

DON'T DRIVE WHEN DROWSY!!! If you're tired, pullover. Seriosly, stop at a rest stop or all-night convenience store. Driving whilst drowsy CAN kill you. Your reactions times are much slower, your brain is foggy. It's not worth losing your life -- just don't do it.

Costa Farms Review & Giveaway Ends 1/29/12

CONFESSION: I am a plant killer!

At least, I was a plant killer. Wandering Jew, Aloe, Ivy... KUDZU! You name it -- I made it die. At one point, I think the City of Atlanta was hoping to hire me to touch the Kudzu growing by the freeways -- a sure way to kill it off. :(

Not anymore, I'm happy to tell you! Nope. You see, I discovered the magical world of Costa Farms of Miami, Florida. The plants supplied by Costa Farms are beautiful, hardy, and come, happily for me, with detailed directions for their care and feeding!

I haven't killed a single plant! GO ME!

A couple of months ago, I received some absolutely lovely plants for review. It was... poignant. You see, my beloved Nan was President of the Tybee Island Garden Club. Sadly, I never attended meetings with her or shared her love of flowers and plants.

I recall, though, one time I planted Impatiens under our old oak tree. She was just so tickled that I'd done that for her. She's gone now and the oak tree toppled...

Well, I love my plants now and I do my best to take care of them properly. They bring me no end of pleasure -- they make me smile. And that's what it's all about. I understand now, Nanie.

I received several plants and gave my Mom a couple for her apartment, my sister fell in love with the fern!

My favourites are the Anthurium and the Zamioculcas. They are both low-maintenance, air-purifiers. That's a HUGE factor for me as Mike continues to smoke those evil cigars occasionally.

Anthurium [Flamingo Flower, Pigtail Plant]

Plant Features:
Anthuriums are subtropical favorites with varieties growing in such diverse areas as South America and the Pacific. They are perfect as cut flowers or as potted plants in varying sizes. They are popular around Valentine's Day, Mother's Day and Easter. To get them to flower continuously, place in a filtered light location and fertlize during the growing season. The plant should be kept clean of all yellow or decaying leaves.

Zamioculcas [ZZ Plant]

Plant Features:
The Zamioculca, also known as the ZZ plant, is one of the strongest plants on the market. Frequently found in low-light locations such as malls, and any areas of the home or office where minimal light shines through, the ZZ is a true survivor.

Ideal indoor houseplants are of ‘heavy mettle’ – durable enough to withstand low light and irregular watering. The plants that fit this category seem to handle abuse fairly well, and can adapt to a variety of conditions. One characteristic that seems to be consistent is that these plants are slow or slower growers then other indoor tropicals.

Aglaonemas are durable, versatile tropical foliage plants that are very popular for use indoors and for interiorscape settings. The old standby varieties and newer hybrids come in shades of green with faint silver bands, dark green with cream colored bands or predominately silver with some green banding. Heights may range from one foot to three feet and these easy to maintain plants tolerate low light levels indoors and remain attractive for long periods with minimal care.

The ponytail palm is basically a ‘plant it and forget it’ kind of plant, providing it has enough light to thrive and somewhat steady water throughout the growing season. Because this is an arid plant by nature, periods of dryness are not deadly for an established plant. As with all palms, ponytail palms should never be top-trimmed, and they will respond wonderfully to a consistent feeding program in the growing season. Keep in mind, though, that the ponytail palm is an extremely slow-growing plant, so don't expect your desktop plant to transform into a corner unit in one or two growing seasons.

A tropical plant, sansevierias could be elected easiest of all houseplants. They like warmth and dry air; will accept a little sun or a lot; and are not even fussy about the amount of moisture in the soil. Called many nicknames by gardeners, including snake plant and mother-in-law’s tongue, Sansevierias are favored for its ability to grow in low-light situations. Zeiss -- Better Vision

Everyone in my family has vision issues -- I would say "except me", but I've got issues, too. I suppose mine is due to age. I wear reading glasses but haven't yet moved on to prescription eyewear.

Ya'll know that I'm a Java Junkie -- always in search of a new coffee to try and share!

I admit -- when I made my first batch -- it was too strong and bitter. What did I do wrong? I used WAY too much coffee! I have a 4-cup coffee-maker and I used enough coffee for 10 (!) cups!

It's a very smooth coffee. Full-bodied, bold flavour, nice sharpness at the end. The taste is interesting -- lovely and deep. Faintly woodsy. Definitely a great early morning coffee!

I'm sure you all know by now that Mike and I love to cook and try new foods. We are never disappointed with the foods we've received from the incomparable Robert Rothschild Farm.

Over the Holidays, I received a jar of their Caramelized Onion Balsamic Spread. I went wild with it!

I found so many ways to use this amazing spread. Sweet or savory -- it's the perfect condiment.

Mike is a Brie Cheese freak and he used it first. He placed a round of Brie in Crescent Roll dough, topped the cheese with the Carmelized Onion Spread, folded the dough over the top and baked it. It was YUMMEH!

We topped our burgers, too. Crackers, pita... you name it. We also used it to top an apple-baked pork loin. The flavour is incredible and the variety of uses is endless.

Caramelized onions, balsamic vinegar and crushed red peppers join together for this incredible spread.

•Perfect to use as a cheese topper – serve with toasted bread for a delightful appetizer.

Quick Herbed New Potatoes

Ingredients:

•Aluminum foil
•1 1/2 lbs. New potatoes, cut in quarters
•6 cloves Garlic, more if desired, do not remove the skins
•Olive oil
•1/2 cup Robert Rothschild Farm Caramelized Onion Balsamic Spread
•Salt and freshly ground pepper to taste
•2 sprigs Fresh thyme
•2 sprigs Fresh rosemary

Instructions:

1.Preheat grill to medium-high heat.

2.With a double layer of aluminum foil, create a packet for the potatoes.

3.Place the potatoes in a mixing bowl with the garlic; add enough olive oil just to coat the potatoes.

4.Fold in the
Caramelized Onion Balsamic Spread and season with salt and pepper. Place the potatoes and garlic in the center of your double layer foil packet.

5.Top with herb sprigs. Fold the foil over the vegetables; fold over the remaining 3 edges at least twice to seal.

6.Place foil packet in preheated grill for 30-40 minutes or until potatoes are tender. Be careful of the steam when opening the packet.

7. Discard the herbs, check for seasoning and serve hot.

Start to Finish: 15 min
Makes: 14 servings (1/2 cup each)

INGREDIENTS:

3 cups Corn Chex® cereal
3 cups Rice Chex® cereal
1/2 bag (14-oz size) caramels (about 25)
2 tablespoons butter or margarine
2 tablespoons milk
1/4 cup semisweet chocolate chips

PREPARATION DIRECTIONS:

1. In large microwavable bowl, mix cereals.

2. In medium microwavable bowl, microwave caramels, butter and milk uncovered on High 2 to 3 minutes, stirring after each minute, until caramels are melted and mixture is smooth. Pour over cereals; gently stir until evenly coated.

3. Microwave on High 3 to 4 minutes, stirring after each minute, until just beginning to brown. Spread on waxed paper to cool.

4. In small microwavable bowl, microwave chocolate chips uncovered on High about 1 minute or until chocolate can be stirred smooth. Drizzle over snack. Refrigerate until set. Store in airtight container.

RECIPE TIP:
For easy drizzling, spoon the melted chocolate into a small food-storage plastic bag. Snip off one tiny bottom corner and squeeze the chocolate over the cereal mixture.

If you're like me -- you grew up with Hickory Farms.

Blue Cheese Dijon Mustard Review & Giveaway Ends 12/5/11

Mustard is my favourite condiment. Always has been. Most kids love ketchup -- Mine did!
Not me. Even as a little kid -- it was mustard!

When I received this jar of Blue Cheese Dijon Mustard, I was so tickled. Mustards are my *go to* choice for pork, beef, lamb, and fish. And it's perfect for dips and sauces -- especially during the upcoming holidays.

I made a special sauce with the Blue Cheese Dijon Mustard that is reminiscent of a sauce served at a childhood restaurant on Tybee Island.

1/2 Cup Blue Cheese Dijon Mustard
2 TBLS. Ketchup
2 TBLS. Sweet Pickle Relish
1/4 TSP. Black Pepper

Mix well, chill. Serve on burgers and hot dogs! (YUMMEH!)

Blue Cheese Dijon Mustard

The combination of blue cheese, honey and spices is sure to tantilize your taste buds.

•This delicious mustard also makes an excellent vinaigrette.
•All Natural
•Gluten Free

Beef with Blue Cheese Mustard Pan Sauce

Ingredients

•1 (7-ounce) filet mignon (2 inches thick)
•1/2 teaspoon olive oil
•1 1/2 tablespoons red wine
•1/4 cup beef broth
•1/4 cup water
•2 tablespoons Blue Cheese Dijon Mustard
•1 teaspoon unsalted butter
•Blue cheese crumbles

Instructions

•Season the beef with salt and pepper. Heat oil over moderate heat in a small heavy skillet until hot but not smoking, then cook filets 2 to 3 minutes on each side for rare. Let stand on a cutting board, tented loosely with foil, 5 minutes. While filets are standing, deglaze skillet with wine over moderate heat, scraping up brown bits. Add broth and water and boil until reduced to about 1/4 cup. Remove from heat and whisk in Blue Cheese Dijon Mustard, butter, crumbles and any meat juices from cutting board. Taste and add salt and pepper as needed. Thinly slice filets and serve with sauce.

Thanksgiving is behind us. Christmas, Hanukkah, and other Holidays are rapidly approaching. Most of us will visit our friends and relatives over the next month -- but our brave and faithful Troops are stationed all over the world -- many in places inhospital and far flung from those they know and love.

When our troops are called to serve, their families must rise to meet the challenges of service as well. To thank them, Cheerios and the USO have partnered in a postcard campaign that spreads Cheer directly to these honorable military families and supports USO programs. Here´s how it works:

During the months of October and November, 2011, specially-marked boxes of Cheerios cereal will feature Cheer postcards on the front of the box. Consumers can simply cut out the postcard from the Cheerios logo, write a message of thanks on the back, add a stamp and mail the pre-addressed card to the USO. The USO will deliver the Cheer card to military families across the country.

For each postcard received through November 2012, Cheerios will make a $1 donation to the USO to help fund programs that support military families.

To kick off the campaign, Cheerios has already donated $150,000 to the USO and will donate up to an additional $100,000 based upon the number of postcards received from specially marked boxes now through November 30th, 2012.

I made Orange Chicken with Rosemary and Ginger a few nights ago.

Here's the recipe:

INGREDIENTS:
4 boneless, skinless chicken breasts
1 sprig Rosemary
1/2 teaspoon fresh ginger
1 small orange sliced thin
1/2 teaspoon orange zest
1/2 cup white wine

DIRECTIONS:
Place white wine and several orange slices in bottom of glass or ceramic oblong pan. Add chicken breasts. Gently pull needles from Rosemary and sprinkle on top of chicken along with orange zest and ginger. Place remaining orange slices on top. Cover and bake at 375F for one hour. Uncover and bake an additional 10 minutes. Serve with rice pilaf. Serves four.

Ya'll know I love my sushi! I'm always asking Mike to bring it home (or take me out)!

My problem is always the Wasabi. It just never tastes the same from place to place.

When Robert Rothschild Farm sent me a jar of their Lemon Wasabi Sauce to review -- I was ecstatic!

This sauce is so creamy. It's perfect for sushi and so many other foods! I've used it as a dip with crackers and I've spread it on toasted pita triangles topped with sliced roast beef. YUM!

A bold blend of lemon, wasabi and raspberry vinegar makes a statement.

It's warm (as Wasabi should be) but not excessively so. The heat hits the back of your throat -- but the great flavour lingers.

It's to the point where I take the jar with me when we go out (and guess where Mike's taking me tomorrow?). Yes, I've gotten a few strange looks for bringing my own wasabi but I've also had several folks ask me where I got it and wanting to know where THEY can get it!

Truly, it's a taste sensation! I love it.

Each product definitely lives up to it's promises! The all-purpose spray cleaner works well on steel, wood, and tile surfaces and also cleans windows and mirrors. I LOVE the clean, citrus scent. It makes the whole house smell fresh and clean. It's a grease killer, too! I used it to clean my microwave oven and it just melted away the 'gunk' that accumulates so quickly there.

The Laundry Detergent is fab. I rubbed a bit on stains and, rather to my surprise, it lifted tough stains right out. The older I get -- the more I want to eat healthy foods. I suppose with age comes some wisdom. I am also still losing weight -- slowly but surely.

Everyone knows by now that I love coffee. It's the world's worst kept secret. ;D

I actually discovered Coffee Fool a few years ago. But when we moved, I lost track of them. In my never-ending search for coffees, I found them again! And I am so very happy that I did!

Did I say I freaked? You should've seen me after that first grind and cup! BLISS!

Centuries of holding back the sea has taught the Dutch a thing or two about how to make everything in their life...stronger. So if you thought your chocolate coffee couldn't possibly get any more chocolatey, we give you a lock-tight guarantee that it can.

Again, my first response was to associate the heady aroma with food (why is that???) -- this time Chocolate cake. Chocolate just touches so many responses in my soul... :)

My first cup, again, was black. The chocolate hits the back of your throat and lingers pleasantly. This is *THE* perfect coffee for iced coffee and / or a frappe.

I made one pot just for iced coffee. I ground the beans, let the coffee cool a bit, added sugar and sweet cream to taste, then allowed it to cool a bit more before refrigerating. This put every coffee house I've ever visited to shame.

Coffee should be a somewhat sweet beverage naturally. The next time you make coffee, breathe in the aroma, take a long, lingering sip. Is it bitter? Burnt? Does it have an after-taste? Not signs of true freshness. You won't find that with Coffee Fool Coffees.

This is the PERFECT assortment for the busy family, as a care package for the University student (as my Lizz pointed out to me several times), for grand-parents, your Pastor or Priest, or anyone! This is a great holiday gift idea, of course. This is such a busy time fo the year, the holidays rush at us and this assortment is such a time-saver. Great food, great price, and so convenient!

For us, it served to make the tastiest Sunday dinner with my Mom (which is a tradition for us). We took the pork chops, stuffed baked potatoes, and the oh-so-good Chocolate Lovers cake! Trust me, it was a HUGE hit!

Everything was easy to assemble and prepare, the chops were incredibly juicy, the potatoes were perfect (and I generally don't like frozen potatoes) and not "mushy" at all. The Chocolate Lover's Cake is rich, creamy, moist... I want a slice right now so much it hurts.

The steaks... the burgers... the chops... the deep, rich flavour is almost impossible to describe. This is the best of the best quality meats you will ever find. Mike and I were really amazed. We knew it was going to be very good, but we just didn't realize just HOW good.

I do wish I had more photos of me cooking -- but we cooked -- we ate! You understand! LOL!

I will not hesitate to purchase from Omaha Steaks in the future (Yes, Lizz, Christmas is coming!) and highly recommend them to my readers. You will not be disappointed.

We L*O*V*E Beef Jerky! Mike considers himself quite the connoisseur of fine jerkys.

We were just delighted to receive two packages of Mama Mia's Beef Jerky to try. We got the Homestyle Beef Jerky and the Honey Teriyaki Sweet and Spicy Jerky.

It's wonderful. I love ANYTHING sweet and spicy and Mama Mia's Honey Teriyaki Sweet and Spicy Jerky is perfectly seasoned with spices.
This has to be some of the most supple, moist beef jerky I've ever tasted. It smells heavenly and the taste is just killer. I claimed the bag for my own and only gave Mike a few pieces. It didn't last long. :)

Mike claimed the bag of the Homestyle Beef Jerky for himself (although I did get a few bites!). It, too, was perfectly seasoned. It was not tough at all -- it was a bit juicy (just as we like it!) and so good.

The price is great as well! At just $6.00 per bag, it's a great bargain for home-made jerky!

We love olives! My Mom and I can eat them all day long and into the night!
