A Taste from Home with Frito-Lay: Southern Style Review and Giveaway, CLOSED!

There is something very special about being a Southern girl -- Georgia born and bred.

We grow up with amazing foods down here: Hoppin' John, Fried Okra, Grits and Red-eye Gravy, Crawfish, Bar-B-Que, Hot buttered Biscuits, Sweet iced tea...(Great. Now I'm hungry.)

There are always things that take you "back home". Food is probably at the top of the list.

For me, it's hamburgers. Yes, burgers! My Pop and Nan always had a grill in our backyard. In the summer, their 8 kids (me included) and numerous grandkids (and great-grand kids) made a bee-line for the beach and there were people all over our house!

Burgers were ALWAYS on the menu and I can't tell you how many bags of Lay's Potato Chips got devoured each summer! (Or the number of potato chip sandwiches we made!)

When Frito-Lay asked me to share their new regional Chip flavours, I jumped at the chance. When asked to share the recipe that really takes me home, I was even more happy to participate!



These new chips were inspired by popular American Regional Cuisine and include:

**Northeastern U.S. – Lay’s Honey Mustard
**Midwestern U.S. – Lay’s Creamy Garden Ranch
**Northwestern U.S. – Lay’s Balsamic Sweet Onion
**Southwestern U.S. – Lay’s Chipotle Ranch
**Southeastern U.S. – Lay’s Cajun Herb and Spice


All of the Lay’s Regional Flavored potato chips are made with all natural ingredients, and are cooked in healthier oils so they contain 0 grams of trans fats per serving! There’s also less sodium in them than you might think – a 1-oz serving of our Lay’s Regional Flavored potato chips contains less salt than a plain bagel!



The two new Southeastern-inspired flavours are Cajun Herb and Spice and Tangy Carolina BBQ! WOW! Those are two flavours... two aromas... that really take me back to happy memories.



I wanted to share a recipe with you that brought me back to the island where I grew up and lived for almost all of my life.

This is my Pop's burger recipe. He was a wonderful Southern Gentleman and he could really cook!

Pop's Burgers

2 pounds ground chuck
1 small red onion, diced fine
1 small jalapeno, seeded, de-veined, and diced fine
1 tablespoon hot sauce
1 cup crushed Lays Chips (I like using the new Cajun Herb and Spice)
2 eggs

Combine ALL ingredients thoroughly in a glass bowl and refrigerate for 30 minutes. (For a milder burger forego the jalapeno).
Form mixture into palm-sized balls and flatten slightly (don't mash them)

Place on grill for about 5 minutes each side for a medium-well burger.
Serve on a good sturdy bun such as an onion roll. Enjoy!

    Easy Shepherd's Pie Recipe

    Prep time: 10 minutes
    Cook time: 50 minutes

    Ingredients

    1 1/2 lbs ground round beef
    1 onion chopped
    1-2 cups vegetables - chopped carrots, corn, peas
    1 1/2 - 2 lbs potatoes (3 big ones)
    8 tablespoons butter (1 stick)
    1/2 cup beef broth
    1 teaspoon Worcestershire sauce
    Salt, pepper, other seasonings of choice

    Method

    1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

    2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

    3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

  16. Here is a super easy recipe using chips.

    Preheat oven to 400

    Cut up a chicken.
    Skin that chicken.
    Wash those pieces.

    Stir some ( about 3/4 cup) mayo in a bowl with garlic powder, onion powder and whatever else you like in the way of seasonings. I hardly ever measure, I'm an eyeballer.

    On a plate have you some smashed up potao chips. About 1 1/2 cups more or less.

    Take them chicken pieces and coat with the mayo, then roll in the crumbs. Place on baking sheet 35-40 minutes.

    Ingredients

    10 strips frozen French fried potatoes
    2 slices Italian bread
    5 slices deli cooked roast beef
    2 slices provolone cheese
    2 slices tomato
    1/4 cup prepared coleslaw

    Directions

    Preheat oven and prepare french fries according to package instructions.
    Layer Italian bread with roast beef, provolone cheese, tomato, coleslaw, and freshly cooked fries. Serve immediately.

    East Texas Buttermilk Pie
    1 (9-inch) pie shell, baked
    3 rounded tablespoons flour
    1 1/2 cups granulated sugar
    1/2 teaspoon salt
    1/2 cup butter, melted
    3 eggs, slightly beaten
    1 cup buttermilk
    1 teaspoon vanilla extract
    Nutmeg, to taste
    Cinnamon, to taste

    Mix flour, sugar and salt; add to butter. Add eggs, buttermilk and vanilla. Mix and pour into pie shell; sprinkle with nutmeg and cinnamon. Bake at 350 degrees F for 50 minutes. Test with knife. It should come out clean when pie is done.

  37. Enchiladas Recipe






    Prep time: 10 minutes
    Cook time: 20 minutes


    A note about the tortillas. The corn tortillas must be softened before they are rolled and baked in the casserole. Frying them gently in a little oil greatly enhances the flavor of the tortillas.


    Ingredients
    Grapeseed oil (or another high smoke-point oil such as peanut or canola oil)
    12 corn tortillas
    1 medium onion, chopped
    1 clove of garlic, minced
    1 cup of salsa (Mild prepared salsa or make your own using cooked or canned tomatoes, roasted green chiles, onions, cilantro, oil and vinegar. Do not use salsa made with fresh, uncooked tomatoes for this dish.)
    3 Tbsp of tomato paste
    1 cup water
    1 cup of canned crushed tomatoes (preferably fire roasted)
    Olive oil
    1 lb of jack cheese, mild cheddar or longhorn or any mild yellow cheese, grated
    A handful of cilantro
    1 cup of sour cream
    Half a head of iceberg lettuce


    Method

    1 Preheat oven to 350 degrees F.

    2 In a large fry pan at medium-high heat add 3 Tbsp of grapeseed oil. Add a tortilla to the pan. Cook for 2-3 seconds, lift up the tortilla with a spatula, add another tortilla underneath. Cook for 2-3 seconds, lift again, both tortillas, and add another tortilla underneath. Repeat the process with all the tortillas, adding a little more oil if needed. This way you can brown and soften the tortillas without using a lot of fat. You do this process to develop the flavor of the tortillas. As the tortillas brown a little, remove from the pan one by one to rest on a paper towel, which absorbs any excess fat.

    2 Sauté up the chopped onion and garlic, then turn off the heat. Add 1 cup of salsa. Dissolve 3 Tbsp of tomato paste into 1 cup of water, add to pan. Add 1 cup of crushed fire roasted canned tomatoes. Taste. If the sauce tastes too vinegary, add a teaspoon of sugar.

    3 Put some olive oil on the bottom of a large casserole pan. Take a tortilla, cover 2/3 of it lightly with the shredded cheese, then roll up the tortilla and place it in the casserole pan. Continue until all tortillas are filled and rolled. Add sauce to the top of the tortillas in the the casserole pan. Make sure all are covered with the sauce. If not, add a little water. Cover the whole thing with the rest of the grated cheese. Put the casserole in the oven for 10 minutes or until the cheese melts.

    4 Garnish with cilantro and sour cream. Serve with sliced iceberg lettuce that has been dressed only with vinegar and salt. See Perfect Guacamole for a great guacamole avocado side di

    2 8 oz pkgs cream cheese
    2 small cans chili with no beans
    1 lb lean ground beef, cooked
    1 bag TOSTITOS® Restaurant Style Tortilla Chips, coarsely crushed
    12 oz bag shredded cheddar and/or Monterey Jack cheese
    1 jar TOSTITOS® All Natural Salsa (optional)

    Instructions:
    Preheat oven to 350 degrees. To assemble, spread cream cheese evenly in a lightly greased 9”x13” baking pan. Layer chili, cooked ground beef, half of the shredded cheese, crushed TOSTITOS® Restaurant Style Tortilla Chips and the remainder of the shredded cheese in the order given. Bake uncovered for approximately, 15–20 minutes or until cheese melts. Serve immediately with TOSTITOS® All Natural Salsa on the side, if desired.

  54. Chicken Fried Steak for Texans!

    Ingredients

    4 (1/2 pound) beef cube steaks
    2 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon black pepper
    3/4 teaspoon salt
    1 1/2 cups buttermilk
    1 egg
    1 tablespoon hot pepper sauce (e.g. Tabasco™)
    2 cloves garlic, minced
    3 cups vegetable shortening for deep frying

    1/4 cup all-purpose flour
    4 cups milk
    kosher salt and ground black pepper to taste

    Directions

    Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.
    Heat the shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drain the fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible.
    Return the skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with kosher salt and pepper. Spoon the gravy over the steaks to serve.

  62. Here is a recipe for chicken soup:

    take a whole chicken and put in pot with enough water to cover it. Add carrots, celery, onions, and soup greens. Boil until bones are soft; let cool and take meat from bones and put back into soup. Reboil for one hour.

    My recipe is for Carolina BBQ and actually something I have made many times including for bbq sales!

    Sauce
    1 cup white vinegar
    1 cup cider vinegar
    2 tablespoon brown sugar
    1 tablespoon cayenne pepper
    1 tablespoon hot pepper sauce like tabasco or Texas Pete
    1 teaspoon salt
    1 teaspoon ground black pepper

    Put a Pork Butt roast in roasting pan and sprinkle with Salt and pepper and cover with 1 cup of orange juice. Bake at 250 for 8-10 hours (time varies by size of roast) until pork pulls apart.

    Pull roast (don't chop) and top with the above sauce. Serve warm, either on the plate with Coleslaw or on a bun.

  72. BBQ Chicken Pizza

    1 Boboli (or other already baked pizza crust)
    Your favorite BBQ Sauce
    Diced or shredded chicken breast (COOKED!)
    Pizza herbs of your choosing
    Pizza cheese

    Shred or dice cooked chicken breast. Add a little bit of bbq sauce to it.

    Spread a thin layer of bbq sauce onto the pizza crust. Add the chicken and sprinkle with your favorite pizza herbs... I like oregano, basil, and garlic powder.

    Top with shredded pizza cheese and bake according to the package directions.

  82. Grits à Ya Ya
    By Chef Jim Shirley

    4 servings

    Smoked Gouda Cheese Grits:

    1 quart chicken stock
    1 cup heavy cream
    2 cups Dixie Lily grits
    1/4 pound butter
    1/2 pound shredded smoked Gouda cheese
    The Ya Ya:

    8 strips applewood-smoked bacon, diced
    1 tablespoon minced garlic
    1 tablespoon minced shallots
    3 tablespoons butter
    White wine
    1 pound peeled and deveined jumbo shrimp
    1 portobello mushroom cap, sliced
    1/4 cup diced scallions
    2 cups chooped fresh spinash
    2 cups heavy cream
    3 cups smoked Gouda cheese grits
    Salt, pepper and hot sauce to taste
    Method

    First, make your grits. Run the chicken stock into a thick-bottomed saucepan and turn on high til it boils. Mix in the grits and stir like crazy. Reduce to a simmer and allow to cook for 40 minutes, stirring occasionally. Add cream if you need more liquid. Then tumble in the butter, drizzle in the rest of the cram and stir til it's all in the family. Then shake in the shredded cheese and stir very well til it's all nice and smooth.

    While your grits cook, bring a large saucepan to medium heat. Add bacon and cook for about 3 minutes, then add garlic and shallots. Sauté and then add butter and a splash of white wine. When the butter is half melted, add the shrimp. When the downsides of the shrimp become white, flip them and add mushrooms, scallions and spinach. Sauté for 2 minutes. Remove the shrimp. Pour in heavy cream and let simmer while stirring. When reduced by one third, add salt, pepper and hot sauce. Return shrimp to the sauce and combine. Spoon the sauce and shrimp onto heaping mounds of cheese grits.

    •1/2 cup brown sugar
    •1/4 cup paprika
    •1 tablespoon black pepper
    •1 tablespoon salt
    •1 tablespoon chili powder
    •1 tablespoon garlic powder
    •1 tablespoon onion powder
    •1 teaspoon cayenne

    combine all indredients, Makes 1 cup
