Fire Roasted Mediterranean Vegetable Spread Review and Giveaway, *2 WINNERS*, Ends 9/28/12



I've been blessed to blog for the Robert Rothschild Farm for over a year now.  And I'm never disappointed with the products they make!

Recently, I received a jar of the absolutely fabulous Fire Roasted Mediterranean Vegetable Spread.


I love Mediterranean cuisine:  Italian, Greek, French, Spanish... It's hearty, spicy, complex.  Just like Rothschild's Fire Roasted Mediterranean Vegetable Spread.

I tried it several different ways:  On crackers,  a dollup on top of greek salad,  as a dip for taquitos, and more.  It's versatile and it's delicious.  It has a nice 'bite' at the finish.  Love that.

Fire Roasted Mediterranean Vegetable Spread

Description:

Fire roasted eggplant, red peppers, sweet onions, feta and salty capers are blended with tart vinegar to create this delectable spread.

Suggested Uses:

Serve with crackers or baguettes fora  quick appetizer.  Perfect dip for vegetables.  Also try as a condiment on sandwiches.

The following is my favourite recipe.  We tried it last week and it was marvelous!

Mediterranean Seafood Pasta


Description:

A delicious pasta dinner featuring our Fire Roasted Mediterranean Vegetable Spread, shrimp or crabmeat and fresh feta cheese.

Ingredients:

*1 box pasta: Penne, Farfalle or Linguini, cooked
*1 lb. shrimp or crabmeat
*1 Tbsp. Extra Virgin Olive Oil
*1 1/2 cups (1 pint) Heavy Cream or half n half
*3/4 cup Feta cheese, fresh
*Salt & Pepper to taste
*1 cup Robert Rothschild Farm Fire Roasted Mediterranean Vegetable Spread
*1/4 cup fresh basil, chopped


Instructions:

Cook pasta in boiling water according to package directions. Season shrimp with salt & pepper. Heat a large skillet over Medium-High heat & add olive oil. Sauté shrimp 2 minutes or until fully cooked. Add cream, feta & and vegetable spread. Stir over Medium-High heat until mixture begins to thicken; stir constantly to prevent scorching. Add cooked pasta & toss gently. Top with fresh basil. Chicken can be substituted for the seafood.
