We cook a lot of meals with fresh vegetables at my house -- Mike is very much a meat and potatoes kinda guy (It's the Scot in him, I'm sure)!

However, I h*a*t*e to peel potatoes and carrots. And I can't eat carrots that haven't been peeled... I just... can't. Potatoes... some are great with the skin on and some not so much.
